This pudding like cream is great alone, or as a dip for fresh fruit, especially strawberries.
Try grilling orange rounds (peeled first) on the BBQ with it. Great for parties!
3 cups raw cashews (soaked for 8 hrs, water drained)
1/4 cup lemon juice
1/2 tsp sea salt
1/4 cup raw honey
3 TBS coconut oil, melted
1 TBS Vanilla Extract (alcohol free, Frontier brand is good)
Now Do This:
Put cashews, and all liquid ingredients in a high speed blender (such as a Vitamix)
(lemon juice, vanilla, and start w/ 1 cup of water). Start slow then increase speed. You
may have to use a rubber spatula to scrape down the sides. Once mixture is smooth,
add in order:
sea salt, honey, coconut oil. Taste and adjust sweetness or Vanilla if
needed. Chill for 2 hours before serving. Will keep for 4-5 days in fridge. Yum!
