Cleaver to cut coconuts
Vitamix or powerful blender
Gather
2 young coconuts, water and meat
1/4-1/2 jalapeno (start w/ 1/4 and add more if you need)
2 inches of ginger, peeled and grated
2 dates, pitted
1 TBS curry powder
1 TBS Nama Shoyu
1/2 cup cilantro
1/2 c olive oil
Juice of 1 lemon
sea salt to taste
Now Do This.
Cut open coconuts (check you tube for how to videos), drain water into blender. Crack open coconuts and scrape out flesh, add to blender and blend until creamy. Add all other ingredients, but cilantro and blend on high for 1-2 minutes. Adjust salt, sweetness and spiciness w/ sea salt,dates and more jalapeno if needed. Pour into bowls and garnish w/ chopped cilantro. Yum.
